Amla Pickle: In indian household, our grandmothers used to make pickle (achar) at home that are not only delicious but also provide abundance of health benefits. Make Amla Pickle and give to your children or your loved ones.

Amla Pickle (achar) Recipe:

For the amla pickle masala:

  • 2 tsp mustard seeds / rai
  • 1 tsp methi / fenugreek seeds
  • 1 tsp fennel seeds / saunf
  • other ingredients:
  • 7 amla / gooseberry / nellikai
  • ¼ cup mustard oil / any cooking oil
  • 1 tsp mustard seeds / rai
  • pinch of hing / asafoetida
  • 2 tsp kashmiri red chilli powder / lal mirch powder
  • 1 tsp turmeric / haldi
  • 1 tsp salt, add as required

Instructions:

  1. Prepare the Amla: Wash and steam the amla until they’re tender (about 5-7 minutes). Once cool, cut them into segments and remove the seeds.
  2. Dry Roast the Spices: In a pan, dry roast mustard seeds, fenugreek seeds, fennel seeds, and cumin seeds until fragrant. Allow them to cool, then coarsely grind them in a blender or mortar and pestle.
  3. Temper the Oil: Heat mustard oil in a pan until it reaches smoking point, then reduce the heat. Add asafoetida, followed by the ground spice mix.
  4. Combine Ingredients: Add turmeric powder and red chili powder to the oil and spices. Stir well, then add the amla pieces, salt, and jaggery/sugar (if using). Mix thoroughly so that the amla is well-coated with spices.
  5. Add Lemon Juice: Turn off the heat, let the mixture cool, and add lemon juice. Mix well.
  6. Store: Transfer the pickle to a sterilized jar, and let it marinate for a couple of days before enjoying it.

    • Lay amla pieces on a cloth and let them dry for a few hours or sun-dry for a day.
  1. Mix with Jaggery:
    • In a bowl, coat the amla with grated jaggery. Cover and let it sit for 1-2 days.
  1. Dry Candy:
    • Spread the coated amla on a tray and sun-dry for 2-3 days (or oven-dry at low heat for 2-3 hours).
