Amla Pickle (achar) Recipe:

For the amla pickle masala:

  • 2 tsp mustard seeds / rai
  • 1 tsp methi / fenugreek seeds
  • 1 tsp fennel seeds / saunf
  • other ingredients:
  • 7 amla / gooseberry / nellikai
  • ¼ cup mustard oil / any cooking oil
  • 1 tsp mustard seeds / rai
  • pinch of hing / asafoetida
  • 2 tsp kashmiri red chilli powder / lal mirch powder
  • 1 tsp turmeric / haldi
  • 1 tsp salt, add as required

Instructions:

  1. Prepare the Amla: Wash and steam the amla until they’re tender (about 5-7 minutes). Once cool, cut them into segments and remove the seeds.
  2. Dry Roast the Spices: In a pan, dry roast mustard seeds, fenugreek seeds, fennel seeds, and cumin seeds until fragrant. Allow them to cool, then coarsely grind them in a blender or mortar and pestle.
  3. Temper the Oil: Heat mustard oil in a pan until it reaches smoking point, then reduce the heat. Add asafoetida, followed by the ground spice mix.
  4. Combine Ingredients: Add turmeric powder and red chili powder to the oil and spices. Stir well, then add the amla pieces, salt, and jaggery/sugar (if using). Mix thoroughly so that the amla is well-coated with spices.
  5. Add Lemon Juice: Turn off the heat, let the mixture cool, and add lemon juice. Mix well.
  6. Store: Transfer the pickle to a sterilized jar, and let it marinate for a couple of days before enjoying it.
